WELSH POKE BOWL

 

We have teamed up with our friends at the Black Mountains Smokery to bring you the most amazing combination of their oak smoked salmon and our NEW smoked kraut with dill and cucumber. We add our smoke with Halen Mon smoked water and the black mountain smokery is legendary,  nothing touches the quality of their smoked food.

Method

  • Cook one or two portions of organic brown rice, drain and add miso paste to taste (I used about a table spoon as I like it punchy) but less is fine too.

  • Allow to cool whilst you gather together the other ingredients.

  • Fry spring onions

  • Boil a fresh egg, peel and cut in half

  • Slice half an avocado

  • Cut some cherry tomatoes

  • Cook some sweetcorn

  • Gather together your fermented krauts to top of the bowl and some soft herbs if you have them.

Now the fun part time to create some art.

Layer the bowl with the miso rice and place the fabulous salmon on. Then have some fun with your colours. There are not set rules here but we have paired our smoked kraut with other complimenting ingredients to give you a gentle flavour explosion. If you like it hot add some chilli, really anything goes!
