Nasi Goreng
This is a great breakfast, lunch or dinner dish using our amazing fermented kraut. I have used the turmeric one here but all of them will work - adding in the crunch and daily hit of fermented food - its an Indonesian fried rice dish with lots of spice. You can add meat but we like a nice fresh egg from the hens on the farm.
Be careful with the chilliβs test the heat and modify as some can be very hot!
Ingredients
1-3 medium hot chillies
Garlic
Fresh ginger
Honey
Fresh limes
Soy sauce.
Brown basmati rice
Red onions
Fresh coriander
Half a jar of Jones fermented kraut.
Method
Start with the sauce - bake 3 chillies, 2 cloves of garlic unpeeled and a knob of ginger until soft and slightly brown. Peel the garlic and ginger and whiz this in the blender with the chillies and a good slug of soy (4 tablespoons), honey a teaspoon (we love Wainwrights Honey) and the juice of one lime.
Cook 2 portions of rice.
Fry the onions lovely and caramelized. Add the cooked rice to the pan adding in some grated fresh ginger, finely sliced chilli and fresh coriander. Add in half a jar of jones fermented kraut, stir through warm and add in the sauce.
Fry an egg in a separate pan (runny yolk best) and with an extra sprinkle of chili and some Halen Mon sea salt your ready to serve. Enjoy.
