Chickpea Blondies
The hardest part of this recipe is remembering where you last put your magimix. Once dusted off, this simple and outrageously delicious snack may just change your life. It is gluten free, made from clean ingredients and the chickpeas are dense with nutrients such as dietary fibre, protein, minerals and vitamins (especially B9 - folate). This is a great way to give healthy, gut-friendly treats to kids - ours love it.
Ingredients
1 Β½ cans of strained chickpeas (organic if possible)
120g of best peanut butter (we are pip and nut addicts)
A splash of vanilla essence, one teaspoon of salt, one teaspoon of bicarbonate of soda
150g of honey or maple syrup 175g of best quality dark chocolate chips
Instructions
Save the choc chips on one side and blitz all the remaining ingredients into a smooth paste.
Stir in the chocolate chips.
Transfer the mixture into a small brownie tin lined with baking parchment.
Cook for 20ish mins on 180c
Allow to cool - they wonβt last long!!
