RED CABBAGE
Who doesn’t love red cabbage this time of year - All of our Apple Cider Vinegars and Tonics work with this quick and easy recipe and works like a dream with your Christmas dinner.
Ingredients
One large red cabbage finely chopped
75ml Jones Apple Cider Vinegar or any of the blends will work (we used the vegan tonic)
2 apples cored and chopped into wedges
200ml of water or veg stock
50g of caster sugar
Spices - pinch of cinnamon, couple of star anise and two bay leaves
Method
Combine all the ingredients in a pan (leaving aside the apple) bring it to the boil, then simmer for 30 mins. Add the apple and simmer for a further 15 mins. Season to taste.
