Black Garlic Kimchi Noodles
Adding the black garlic kimchi to this noodle dish gives a lovely sharp pop which cuts through the richness of the noodles and egg. Absolutely scrummy comfort food and super healthy too.
For two people
200g Noodles
For the noodle dressing
1 tablespoon of soy sauce
1 tablespoon of sesame oil
1 tablespoon of maple syrup
1 tables spoon of tahini
1 tablespoon of rice wine vinegar
1 tablespoon of chilli paste
1 teaspoon of fish sauce or miso
Half a jar of Jones black garlic kimchi (chopped)
1 egg
200g of mushrooms
1 small bag of spinach fresh or frozen
Chilli oil and Black sesame seeds for garnish
Fry the mushrooms in Ghee – we love Happy Butter Ghee. Warm through the spinach and set aside.
Mix up the dressing and chop up the kimchi.
Boil the noodles and strain then dress and add the black garlic kimchi. Fry your egg.
Place the dressed noodles in a bowl with the mushrooms and spinach. Top with your friend egg, sprinkle over some black sesame seeds and drizzle with some crunchy chill oil. Ive just discovered @thewoolfskitchen and its delicious!
