Leak and Potato Soup

The fact the nights are drawing in, only means one thing, heart warming comfort food is back. Here’s another classic recipe that the slowly-made deliciousness of Jones ACV can lift. Yummy - lets get stuck straight in.

Ingredients for 4 servings:

  • 2 knobs of butter

  • Slug of oil (olive, rapeseed, vegetable)

  • 4 cupfuls of chicken stock

  • ½ White onion 

  • 4 medium sized potatoes

  • 4 leeks

  • 1 peeled and chopped eating apple

  • Handful of chopped parsley

  • Bay leaf

  • Small sprig of sage

  • Jones apple cider vinegar

  • Cream

Method

  • Heat the butter and rapeseed oil in a large saucepan.

  • Chop the onion, leek and apple and saute for a few minutes until transparent.

  • Peel and roughly chop the potato.  Rinse to remove excess starch.

  • Add the potatoes to the pan, then add the Jones ACV, chicken stock, bay leaf and sage.

  • Bring to the boil, reduce heat to a simmer and cover.  Cook for 20-25 minutes (or when everything seems tender)

  • Let it cool a little.  Remove the bay leaf and sage.

  • Blend with a hand held.

  • Add a little cream and season to taste.

Give it a whirl and serve with a scrummy baguette.
