Leak and Potato Soup
The fact the nights are drawing in, only means one thing, heart warming comfort food is back. Here’s another classic recipe that the slowly-made deliciousness of Jones ACV can lift. Yummy - lets get stuck straight in.
Ingredients for 4 servings:
2 knobs of butter
Slug of oil (olive, rapeseed, vegetable)
4 cupfuls of chicken stock
½ White onion
4 medium sized potatoes
4 leeks
1 peeled and chopped eating apple
Handful of chopped parsley
Bay leaf
Small sprig of sage
Jones apple cider vinegar
Cream
Method
Heat the butter and rapeseed oil in a large saucepan.
Chop the onion, leek and apple and saute for a few minutes until transparent.
Peel and roughly chop the potato. Rinse to remove excess starch.
Add the potatoes to the pan, then add the Jones ACV, chicken stock, bay leaf and sage.
Bring to the boil, reduce heat to a simmer and cover. Cook for 20-25 minutes (or when everything seems tender)
Let it cool a little. Remove the bay leaf and sage.
Blend with a hand held.
Add a little cream and season to taste.
Give it a whirl and serve with a scrummy baguette.
